Herbal garlic oil 5/11/2019

My friend gave me a bag of mixed herbs that she hand-picked. She recommended to make an herbal garlic oil with it.

It was my first time to make my homemade herbal garlic oil.

As a preparation, I sanitized a glass jar with boiling hot water. On the bottom of the glass jar, I put the mixed herbs. Then I added lots of peeled garlic cloves and olive oil into the glass jar. I mixed them well and kept the glass jar for one week in the refrigerator. I kept it in the refrigerator because our house/area gets really hot in this time of the year.

It looked like the garlic have been fermented. The garlic oil amount level was raised than the first day. The entire jar looked like all white.

First, I thought the garlic was melted in the olive oil. When I opened the lid, it gave off a nice fragrant with herbal garlic oil, so I figured it was not rotten nor ruined.  

Since this was my very first time making a homemade herbal garlic oil, I was not sure if this was done correctly. I was not sure if it was normal to have melted garlic in the oil.

I searched the information about melted garlic in the olive oil in the Internet, but I could not find anybody written about it.

I mentioned it to my friend. She was surprised to hear my garlic was melted. She recommended to take out the glass jar from the refrigerator and keep it in the room temperature. So I followed her advice.

She was right. My herbal garlic oil looked just fine in the room temperature. And the garlic was not melted at all. It looked melted because the oil got cooled and hardened.

Aside from my ignorant concern, my homemade herbal garlic oil was done properly. It tastes very good with pasta, salad, and other food ingredients.
